What are live fermentation cultures?
For live bacterial strains, organic sprouted soybeans are fermented using traditional kefir and kombucha cultures. This process takes approximately one month and results in a complex food matrix containing various naturally occurring microorganisms, enzymes, and plant compounds.
During fermentation, the following are formed, among others:

Organic acids
Peptides
Activated polyphenols
Pre-digested nutrients
Amino acids
After completion of the fermentation process, the product is carefully freeze-dried to preserve its composition. It is then analyzed for nutritional and microbial values.
Symbiotic fermentation according to Living Nutrition
Living Nutrition refers to this approach as “Symbiotica”: a reference to the natural cooperation between different microorganisms within a fermentation culture. In this process, microorganisms develop collectively within a plant-based food matrix.
