Genmai miso unpasteurized is a delicious flavoring made from organic soybeans and unpolished brown rice. It fits well in Japanese as well as European cuisine. Genmai miso ferments for at least 12 months in 100-year-old cedar barrels under the charismatic hands of our Japanese experience experts. Genmai miso is ideal as a base for miso soups, sauces and dressings. Also delicious when combined with legumes or cabbage-like vegetables. Genmai miso has a medium-potent flavor.
Genmai miso (unpasteurized) is a medium-strength Japanese flavoring made in the traditional way from fermented soybeans and unpolished brown rice. Fermentation period: at least 12 months.
The word ”genmai” means “brown rice”; genmai miso is made with genmai koji. It is not common in Japanese cuisine but this is a new rather than traditional product. Almost all types of rice miso are made from polished rice because the outer husk of brown rice is very resistant to fungi, including koji.
After some experimentation, they found a way to make miso from unpolished rice. The result is a new, very rich and amazingly tasty variety. It is not as sweet as rice miso from polished rice, but lighter in flavor – a new, versatile miso. It is especially gratifying that genmai miso is now also made from organic-organic rice, further increasing the quality.
Rice miso is light, good tasting and the sweetest kind of miso. Ideal for summer miso soup or for mixing with other varieties. It also appropriates very well for sauces, dressings and spreads. It is relatively high in grain sugars and low in salt.
Application:
As a seasoning in soups, sauces, vegetable and fish dishes. Use 1 tablespoon as a substitute for a bouillon cube or for 200 ml of miso soup.
Retention:
After opening, store in the refrigerator for up to 3 months.
