The olives of this olive oil are mostly hand-picked by several biodynamic olive farmers on the Greek Peloponnese peninsula. The olives are traditionally pressed in the oil mill. After this cold processing (below 27 °C), the olive oil is bottled at the small-scale Epikouros factory in Kalamata. Olive farmers follow the rhythm of the seasons and take the position of the moon into account when cultivating. When olive growers take something from the earth, such as harvesting olives, they always give something back to the earth such as compost or sheep manure. You can taste from the quality of the olives that the soil is fertile and vital. The olive oil Bio dynamic with Demeter label is delicious in, for example, salads, meat and fish dishes, with vegetables or on bread.
